Serves 4


  • 1 medium white cabbage
  • 1 onion
  • ½ cup sweet yellow miso
  • ½ cup sake
  • 1 cup mirin
  • 2 teaspoon caster sugar
  • 1 tablespoon honey mustard
  • 1 tablespoon rice vinegar
  • Salt and pepper
  • 4 tablespoons toasted sesame seeds


  1. Finely shred the cabbage and the onion.
  2. Soak them in iced water for a few minutes, dry in a salad spinner and put in a bowl in the refrigerator for thirty minutes to one hour.
  3. This has the effect of crisping the cabbage and onions.
  4. To make the miso mustard dressing, combine the sake, mirin, sugar and miso in a saucepan over a medium heat.
  5. When it comes to a boil lower the heat and allow to simmer for a further 10 minutes, stirring to ensure that it does not burn.
  6. Remove from the heat, and when cool add the honey mustard, vinegar and seasoning.
  7. Toss the cabbage and onion in the dressing, and serve the salad topped with toasted sesame seeds.
