Nikujaga is a Japanese dish containing meat and potatoes that will leave you feeling full and satisfied.Nikujaga

Serves 4


  • 12oz beef or pork loin
  • 8 waxy potatoes
  • 2 onions, peeled and cut into wedges
  • 2 carrots peeled and cubed
  • 2 inches ginger, peeled and finely grated
  • 4 cups dashi
  • 4 tablespoons mirin
  • 3 tablespoons sugar
  • 4 tablespoons shoyu
  • 1 tablespoon vegetable oil


  1. Slice the meat finely, and then cut into thin strips
  2. Heat the vegetable oil in a pan and sauté the meat over a gently heat until it browns.
  3. Add the onion, carrot, ginger and potatoes and sauté together.
  4. Pour over the dashi and bring to the boil.
  5. Turn the heat down to simmering point and add the sugar, mirin and shoyu.
  6. Take some baking parchment and cut it into a circle of similar diameter to the pot.
  7. Place it so that it just touches the top of the stew. Put a lid on top of the pot.
  8. Allow to simmer for one hour or until the meat is tender.
