Vegetable Sesame Rice Balls

This easy to prepare recipe will leave you wanting more after your plate is cleared.Vegetable_Sesame_Rice_Balls

Ingredients:

  • Raw vegetables (leeks, carrots, cabbage, spinach for example)
  • 3 cups cold cooked Japanese rice
  • Juice of half a lemon
  • 1 tablespoon tamari
  • 1 block silken tofu
  • 1 cup sesame seeds
  • Vegetable oil

Dipping sauce:

  • 2 tablespoons tamari
  • 2 tablespoons mirin

Preparation:

  1. Finely chop the chosen mixture of vegetables. The end quantity should be 1 cup.
  2. Combine the rice and vegetables in a bowl, add the lemon juice and tamari.
  3. Drain the tofu, and dry it with kitchen paper. Mash it with a fork until smooth and add to the rice mixture.
  4. With wet hands roll the mixture into golf ball sized balls and flatten slightly. Roll the balls in sesame seeds.
  5. Heat the oil in a frying pan to a depth of 1cm.
  6. In batches of 6 at a time fry the rice balls until crisp and golden, turning once to brown both sides.
  7. Serve warm with the dipping sauce.
